Stop Light on Dash - coolant?

Now I know I have a slight coolant leak which I need to top up every two weeks or so - i can live with that, but I've recently had some erratic behaviour resulting in my current issue.

In the past, the red stop light has come on, and sometimes the engine k light. Then they went off after a few secs.

More recently, the red stop light has been coming on, and staying on, accompanied by the electric fan coming on constantly. Interestly, I can make the stop light go off by flinging the car in a tight turn, or anchoring on, which points to water level to me.

However, the water level light stays off (it used to come for my fortnightly top ups).

I've just attempted top up the coolant, with the bleed-screw and cut-off coke bottle method, engine on, heater on, cap off, watch the level. No topping up was needed, or very little, hard to tell, my coke bottle didn't seal that well.....

Warmed engine up, loads of heat, level constant, fan came on and scared me shitless, after 20 mins I switched off. Stop light never came on, but temp on gauge didn't rise to normal levels, but it wouldn't would it? With cap off?

Letting car settle now - then I'll go for a spin, but is there anything I've missed/done wrong/should do?

It's a P reg D8, 1.9TD, 198k, normally very well behaved.
