Make your own proper Indian curry

Mrs Welly found these blister packs at the supermarket from a company called 'Kitchen Guru' it is basically a card with 6 or 8 tiny pots of Indian spices and the cooking instructions....you need to get the Chicken, Natural Yoghurt, Chilli, Onion, Ginger etc. yourself.

Well, I cannot tell you enough, the Chicken Tikka Masala is fantastic :shock: it is probably THE best curry I've ever had 8) soooo fresh and tasty. I think the spice pack and instructions are £1.80 plus the other stuff you need.

I've made 2 now, great stuff.

Tin of Bacon Spam. Chop into 1/2" chunks and lob in a hot pan with about 3 table spoons of garlic puree and a bit of oil.
Mix about while you chop up a large onion and sling that in too.
When the onion's turned a bit brown, put in about a tablespoon of hot sauce
Mix about a bit then when the air gets toxic (burning chilli = CS gas!!!) put half a jar of Patak's Vindaloo paste in
Mix about a bit then when the paste's softened up a bit, chuck a tin of chopped tomatoes in
Drop the heat and chuck some rice on
When the rice is about done, put in another tablespoon of Insanity Sauce and mix it in - WELL

Good for 4 gorgeous meals. Smooth, without the roughness of the usual curry house "lob in a load of birds' eye chillis". You can just leave the pan on the hob to cool down and slap in the fridge for another day too, just add some water when re-heating to re-hydrate it

Recommended hot sauces: Endorphin Rush (sc. 33,000), Blair's After Death (sc. 49,000) or for more of a kick, Dave's Gourmet Insanity Sauce (sc.180,000) or Da' Bomb Ground Zero (sc. 234,000). Personally I prefer the taste of the Insanity Sauce.

If you ain't got a cast iron mouth, tongue and digestive system, I'd suggest using a DROP of hot sauce instead of a tablespoon. For comparison, Tabasco weighs in at around 1000 scoville units (measurement of heat)...

i got some of this - http://www.ashleyfood.com/pages/gallery ... pper25.php to add to curry and you only need a pin head sized amount in a large sauce pan to give it a hell of a kick ( its 1 million scoville if anyones interested ) , it even comes with a load of warnings on the bottle to avoid contact with skin , warn people before giving to then etc

anything over about sc. 50,000 is irritating to non-sensitive skin... Bought some Da' Bomb "Beyond Insanity" (sc. 115,000) which got delivered today. Insanely ferocious, but no lasting effect and worst of all - virtually no taste :( Had to chuck some After Death in to give it some flavour to match the heat :(

By the way, I also got some "Colon Cleaner" in my delivery. The nicest scotch bonnet sauce I've tasted yet. It's gorgeous! Also got the Dave's Gourmet scotch bonnet sauce. That one's not as nice, but it's got a peppery taste to it which works sooo well on tuna+onion+pepper subs!

I've heard of the Scotch Bonnet etc and understand these other 'blow your head off' additives but I don't understand why you'd enjoy having your face blown off by these super-strong flavours????

What ever happened to subtle? is it really that nice to sit eating with your mouth on fire and sweat pouring from your forehead? :?

Scotch bonnet peppers and sauces made from them really aren't that hot. They do however, along with most (but not all) peppers and hot sauces, have a very nice and distinctive taste.

Yeah, I seem to have a pretty high tolerance to capsaicin - it's not uncommon for me to eat a phal without even getting the sniffles, although chilli seeds can be somewhat unpleasant on the way out as they don't get digested...
