can anyone provide guidance on the type of electrical wire to use for making up a wiring harness for electric mirrors, and windows?

You might be best-going into a breakers yard
and snipping off the connectors with a good length of loom, and get the soldering iron and heat shrink out,

The nicest stuff is silicone coated multi core, TE Connectivity do some nice cabling. You probably want about 18AWG, but check current capability.
