On the subject of fuel consumption with and without aircon, manufacturers stated mpg's are usually slightly higher for non aircon models.
The way I understand it aircon steals some of your horse power therefore you have to push the throttle pedal a little further/ burn more fuel to reach a set speed with it turned on.
My GLX was generally as slow as a slow thing but it did have a noticeable power boost if you turned the aircon off.
Having said all that leaving windows rolled down etc creating more drag will have a greater effect on mpg's than turning the aircon on on a hot day so it's more fuel efficient to turn it on than roll the window down.
To answer the question about turning it off, on a D8 press the ac button once it comes on permanantly, press it again you get 'ac eco' which is off permanantly. Hope that helps. My D8 always reset to auto when I turned the engine off, but then again it was a bit of a shed
